Lemon Cookies

Ingredients

Icing

  • 1 3/4 cup powdered sugar
  • 1/4 cup lemon juice
  • 1 zest of lemon
  • 1 tsp butter (salted)

Butter Cream

  • 1/2 cup butter (softened)
  • 3 cups powdered sugar
  • 1 tsp vanilla
  • 3-4 tsp milk

Cookies

  • 2 cups + 2 tbsp flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp corn starch
  • 3/4 cup butter
  • 1 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1/4 tsp butter extract
  • 2 tbsp lemon juice
  • 1 zest of lemon

Directions

Icing

  1. Combine sugar, lemon, lemon zest.
  2. Add in butter, microwave for 45 seconds.
  3. Whisk until smooth.

Butter Cream

  1. Whisk together ingredients.

Cookies

  1. Whisk together flour, baking powder, baking soda, salt, and corn starch.
  2. Cream together butter and sugar.
  3. Add egg, egg yolk, vanilla, butter extract, lemon juice, lemon zest.
  4. Add dry ingredients.
  5. Form into cookies (1 1/2 tsp balls), bake at 350 for 11 – 15 minutes.
